Liquorice Roots Preparation and Procurement

Preparation
The liquorice roots are dug from the underground, washed, and then dried in a variety of ways such as under the sun, shade or through artificial procedure. After drying, the roots are stored away from heat, light and moisture to retain its flavor and properties.
Licorice processors may further process the roots by cleaning, grinding and then boiling the roots to turn it into an extract. The prepared extract may further be processed depending upon the substance required. For taste preferences, the extract may further be processed by adding natural flavors and/or emulsifiers. The extract is dried to acquire licorice powder and then further processed on various specifications such as the degree of mesh or fineness of the powder.
